Memorial Day and July 4th are right around the corner and my thoughts turn to all things red, white, and blue! When I received a coupon from Driscoll’s, I knew I wanted to make a quick and easy patriotic dessert.

Ingredients for Red White And Blue Cobbler
To make this easy cobbler, you’ll need:
- Raspberries
- Blueberries
- Granulated Sugar
- Lemon Juice (fresh is always best)
- Refrigerated Biscuits
- Sparkling Sugar (or regular granulated sugar for sprinkling)
- Vanilla Ice Cream OR Whipped Cream (optional)
What is Sparkling Sugar?
I used sparkling sugar to sprinkle on the star-shaped dough. Sparkling sugar is large crystals of cane sugar with a glittery shine. These crystals add sparkle, glitter, and crunch to baked goods.

Quick and Easy Red White And Blue Cobbler
My cobbler is so easy to make and ready in under 20 minutes. The berries are cooked on top of the stove and the sugared stars are actually made from canned biscuits.
During the winter, I make traditional cobbler in the oven, but once summer arrives, it’s too hot to have the oven on for very long at a time. I like this version of cobbler because it’s not overly sweet and the berries really are the stars of the show!
Berry Turnovers
You can also make berry turnovers with this recipe. I baked a couple with some leftover berry mixture and biscuits. A scoop of vanilla ice cream would complement the turnovers beautifully!
To make turnovers, roll biscuits into circles. Fill center with the berry mixture and fold the dough over in a crescent shape. Crimp edges with a fork and bake at 350º on an ungreased baking sheet until golden brown. Sprinkle with granulated sugar.

Red, White and Blue Cobbler
This easy-to-make Cobbler is filled with flavorful raspberries and blueberries. The stars are made from canned biscuits and are baked and placed on top of the cobbler before serving. This is a quick and easy patriotic dessert.
Ingredients
- 1 pt. fresh Driscoll's raspberries
- 1 pt. fresh Driscoll's blueberries
- 1/2 cup granulated sugar
- 1 Tablespoon lemon juice
- 2 cans refrigerated biscuits
- 1 Tablespoon sparkling sugar (or regular sugar)
- Vanilla ice cream or whipped cream, optional
Instructions
- Preheat the oven to 400º.
- Combine first 4 ingredients in a medium saucepan.
- Cook over medium-high heat for 8 minutes or until bubbly and the sugar dissolves.
- Remove from heat.
- Separate biscuits and flatten slightly. Cut with a 3-inch star-shaped cookie cutter and place on a baking pan sprayed lightly with cooking spray.
- Sprinkle with sugar, pressing slightly.
- Bake for 8 minutes or until lightly browned.
- Spoon berry mixture into bowls. Top with biscuits.
- Serve with vanilla ice cream or whipped cream.

Blueberries are my absolute faves. What’s not to love about them? I have not tried any blueberry dish that isn’t good plus they always look good in photos. And, they’re my favorite antioxidants.

Strawberries are my favorite. I also love wild blackberries. They grow almost everywhere back in my hometown. During the summer we just stop the car by that side of road, get out and pick berries.
I LOVE wild blackberries and plums! I don’t see them like I did when I was growing up. We’d pick a paper bag full of blackberries and mama would make cobbler. Oh, my!

I’m curious where they get their fresh berries from. Do they source it from their own farm or they have a trusted supplier that provides the berries for over a century now?

Yum! This is amazing. I love the little stars. My kids are huge berry freaks. I’m not so much a berry fan, I know it’s weird to say but I’m more of a banana/grape gal. That said I may have to try this for my kiddos!

You could use pie crust, too, since the berry portion cooks separately from the “biscuit” cobbler. 🙂
