A special breakfast, in my opinion, calls for pancakes. When I combined my love for pancakes and sweet potatoes, I came up with a winner. We also enjoy these pancakes whenever we have breakfast for dinner.
Pancakes Are Perfect For Breakfast Or Brunch
I love having the entire family over for a special occasion breakfast or brunch (it’s a mom thing). Spending time with the family is too important to spend all morning in the kitchen. Aunt Jamima helps me spend less time in the kitchen and more time with the family.
I always rely on Aunt Jemima Buttermilk Complete Pancake Mix to make me look good and to save time. That smiling face was always a staple in my mom’s kitchen and you’ll always find Aunt Jemima pancake mix in my pantry and syrup in my refrigerator.
Secret Ingredient for my Light and Fluffy Sweet Potato Pancakes
Aunt Jemima Buttermilk Complete gives me a headstart on my light and fluffy Sweet Potato Pancakes. I bet you’ll never guess my secret ingredient! It’s baby food sweet potatoes! I don’t have time to cook and mash sweet potatoes. The baby food is the perfect consistency for these pancakes and it’s so convenient.
With just a few ingredients, it doesn’t take long at all to make a huge platter of these pancakes.

Sweet Potato Pancakes
Sweet Potato Pancakes are light, fluffy and easy to make! These pancakes are delicious.
Ingredients
- 2 cups Aunt Jemima Buttermilk Complete
- 1-1/4 cups water
- 4 oz. sweet potatoes, pureed (I use all-natural sweet potato baby food - works perfectly!)
- 2 Tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pinch of nutmeg
Instructions
- Heat skillet over medium heat.
- Combine all ingredients in a medium-sized bowl and stir until large lumps disappear. Do not overmix. Let batter sit for 2 minutes to thicken. If the batter is too thin, add a little more pancake mix. If too thick, add more water.
- Lightly grease skillet with solid shortening.
- Pour slightly less than ¼ cup batter for each pancake onto skillet.
- Flip when pancakes bubble and bottoms are golden.
- Serve with Aunt Jemima® Original Syrup.
Notes
I use Beech-Nut Organic Sweet Potato baby food in the glass jar (4 oz.) for this recipe.

My family loves sweet potato and we love pancakes. You can find me making pancakes on Saturday mornings but it has never ocoured to me to add sweet potatoes to them. I know we will enjoy this!!

I grew up hating sweet potatoes, but then again the only way I had ever seen them made was the horrible Thanksgiving casserole with tons of marshmallows on them. I have since realized I love them – in almost any other way! I definitely have to try this recipe, and think some real maple syrup and perhaps a sprinkling of chopped pecans would make them heaven!
Is there enough liquid in the sweet potato puree to make the batter or do you need to add water per the pancake mix instructions?
I was having a blonde moment on my way out the door when I answered you earlier. Yes, make the pancakes as directed on the package, using 1-1/4 cups water and adding the spices and sweet potato puree. I will add this to the recipe instructions. Thanks for catching that!
