Slow Cooker Pulled Pork Fajitas

Whenever my husband and I head to our favorite Mexican restaurant, he always orders fajitas. For some reason, the smoke from the fajitas zeros in on my eyes. Why doesn’t it go towards him? My Easy Slow Cooker Pulled Pork Fajitas are delicious and there’s no smoke in my eyes. It’s a win-win!

We need a Mexican food fix every single week. Pulled Pork Fajitas satisfies those cravings and because it’s made in the slow cooker, the pork is tender and juicy. The seasonings add another level of flavor. If you have leftovers, freeze them for up to four months.

Slow Cooker Pulled Pork Fajitas

The slow cooker helps me so much with weekday meals. I place the ingredients in the slow cooker first thing in the morning and forget about it.

Every Sunday I have a crowd over for lunch. I get the main dish going in the slow cooker before church and when we get home, the entree is done. I warm up a few sides that I cooked before church, add rolls and we’re good to go.

Ingredients For Slow Cooker Pulled Pork Fajitas

  •  boneless pork loin roast
  • onion, thinly sliced
  • green bell pepper
  • red bell pepper
  • barbecue sauce
  • salsa
  • chili powder
  • paprika
  • cumin
  • salt
  • garlic powder
  • cayenne pepper
  • pepper
  • flour tortillas

Slow Cooker Pulled Pork Fajitas

Remove excess fat from the pork loin and place it in the slow cooker. Arrange sliced onions and peppers on top. Add the seasonings, barbecue sauce, and salsa. Cover and cook on low for 8-10 hours. Serve in tortillas, topped with sauce from the slow cooker.

I usually add shredded cheese, sour cream, and chives to top off the Pulled Pork Fajitas. Charred avocados also pair well with Pulled Pork Fajitas.

Slow Cooker Pulled Pork Fajitas

These pulled pork fajitas are flavorful and easy to make.

Cook Time 10 hours 8 seconds
Total Time 10 hours 10 minutes 8 seconds

Ingredients

  • 2-3 pound boneless pork loin roast
  • 1 large onion, thinly sliced
  • 1 large green pepper, cut into strips
  • 1 large red pepper, cut into strips
  • 2 cups barbecue sauce
  • 1 cup salsa
  • 3 Tablespoons chili powder
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1 tsp. pepper
  • Flour tortillas

Instructions

  1. Trim excess fat from the pork loin and place in the slow cooker.
  2. Top with sliced onions, peppers, sauces and seasonings.
  3. Cover and cook on low for 8-10 hours.
  4. Remove pork and shred it with two forks.
  5. Serve with sauce from the slow cooker.

These are all great looking recipes. Yes, I love the slow cooker for weekly cooking too. As busy as I am, it’s hard to find the time to cook a proper meal. Thank goodness the slow cooker can handle it for me.

That looks so good. I include some kind of Mexican or Hispanic dish on the weekly menu too. Sometimes I don’t always end up cooking what I planned though. A couple days ago, I was making fajitas and realized I put the wrong kind of seasoning. I love your version of slow cooking the meat for a delicious treat.
