Spring is in the air and I’m doing a happy dance because my favorite season has arrived. The days are getting longer and I try to find excuses to be outside instead of indoors. Cooking is taking a backseat to gardening and the front porch has become my new office. It’s so much more fun to work outside.

Also, the boys are in the midst of baseball season and I try to never miss a game. The oldest grandson made the middle school team this year (go, team!) and we’ll be traveling to all his away games too.

Between baseball and gardening, there’s no time or inclination to cook long meals. I don’t want to heat up the house or spend my time in the kitchen. Hello, spring!

There’s something about spring that has me craving light fare, so I created a Mediterranean Ham and Veggie Sandwich that fits perfectly into my busy lifestyle.

Over the years, I’ve perfected the art of flavorful sandwich making and today I’m sharing it all with you. Let’s get started!

Mediterranean Ham and Veggie Sandwich

1. Start with great tasting bread.

A delicious sandwich begins with the best bread. That’s why I use Pepperidge Farm® Whole Grain 15 Grain Bread. It’s low fat, cholesterol free, contains no high fructose corn syrup and is certified by the American Heart Association. Plus, it’s double-wrapped for freshness.

2. Use quality ingredients.

When making a Mediterranean Ham and Veggie Sandwich, Hillshire Farm® Thin Sliced Honey Ham is a key ingredient. It’s sliced extra-thin and slow roasted for hours – just the way I like it.

3. It’s all in the layering.

No one likes a soggy sandwich. That’s why I layer the ham first. Next, I add Hellmann’s® Real Mayonnaise.

My Mediterranean Ham and Veggie Sandwich includes the addition of hummus. I add it right on the top of the Hellman’s® Real Mayonnaise. It adds an intense flavor that’s spicy and delicious. A sprinkle of feta cheese adds a tangy, slightly salty taste that compliments the other flavors.

The alfalfa sprouts are added next. The sprouts add a yummy layer of crunch and color.

I end the layering with another thin layer of ham and top it off with another slice of bread. Ta-da – the perfect layered sandwich!

Ingredients

  • Pepperidge Farm® Whole Grain 15 Grain Bread
  • Hillshire Farm® Thin Sliced Honey Ham
  • Hellmann's® Real Mayonnaise
  • Roasted Red Pepper Hummus
  • Alfalfa Sprouts
  • Feta Cheese

Instructions

  1. On one slice of bread, add a thin layer of ham. Add mayonnaise, hummus, alfalfa sprouts and feta cheese.
  2. Top with another thin layer of ham. Finish the sandwich with another slice of bread.

There are so many different kinds of great tasting breads. We do mostly homemade since we grow our own wheat. For those who don’t make their own bread choose a good brand is very important.

This is definitely hitting my hunger just right. I love sandwiches like this. It’s got a little crunch to it and a different flavor than your regular plain old ham and cheese sandwich. Yummy!

We have Pepperidge Farm bread in the cabinet right now, it’s our fav. My hubby enjoys taking his lunch to work because it is just easier and Hillshire Farm is his brand for lunch meat.
I’m with you baseball season has us pretty busy and it’s already heated up here in Georgia. Sandwiches are on the dinner menu this week!

I just had lunch and am now hungry again lol. I haven’t tried alfalfa sprouts before but looks like a good alternative in place of lettuce. Will have to try these 🙂

This sandwich looks so hearty and filling. I mean, you’ve got protein, carbs, and veggies all in one bite. I am saving this recipe and making these sandwiches for me and my husband to take to work!

Lunch is one of those meals that should be so easy, but never is. And you know why? It’s because it gets boring so fast. Until, hummus. Hummus makes lunch exciting again. And hummus sandwiches, those are winners every time.

Hellmann’s is seriously the best brand for mayo. There is nothing like the taste of their mayo on a sandwich. Hummus on a sandwich sounds like bliss.
