Red, White And Blue Cobbler

by Alli

Thanks, Driscoll’s, for supplying me with fresh raspberries for my Red, White, And Blue Cobbler.

Memorial Day and July 4th are right around the corner and my thoughts turn to all things red, white, and blue! When I received a coupon from Driscoll’s, I knew I wanted to make a quick and easy patriotic dessert.

Red, White And Blue Cobbler in white bowl topped with sugared stars made from canned biscuits

Family-owned for over 100 years, Driscoll’s is passionate about growing premium fresh berries. Their strawberries, raspberries, blackberries, blueberries, and organic berries are sweet, juicy, and naturally wholesome.

Packed with antioxidants, fiber, and vitamins, these berries are a healthy treat for any time of the day. If you’re looking for berry recipes, including healthy berry recipes, visit www.driscolls.com/recipes for recipes, meal inspiration, and more.

Ingredients for Red White And Blue Cobbler

To make this easy cobbler, you’ll need:

  • Raspberries
  • Blueberries
  • Granulated Sugar
  • Lemon Juice (fresh is always best)
  • Refrigerated Biscuits
  • Sparkling Sugar (or regular granulated sugar for sprinkling)
  • Vanilla Ice Cream OR Whipped Cream (optional)

What is Sparkling Sugar?

I used sparkling sugar to sprinkle on the star-shaped dough. Sparkling sugar is large crystals of cane sugar with a glittery shine. These crystals add sparkle, glitter, and crunch to baked goods.

You can order sparkling sugar from Amazon (see above link). As an Amazon Associate, I earn from qualifying purchases.

Quick and Easy Red White And Blue Cobbler

My cobbler is so easy to make and ready in under 20 minutes. The berries are cooked on top of the stove and the sugared stars are actually made from canned biscuits.

Red, White & Blue Cobbler

Red, White & Blue Clobbler

During the winter, I make traditional cobbler in the oven, but once summer arrives, it’s too hot to have the oven on for very long at a time. I like this version of cobbler because it’s not overly sweet and the berries really are the stars of the show!

Berry Turnovers

You can also make berry turnovers with this recipe. I baked a couple with some leftover berry mixture and biscuits. A scoop of vanilla ice cream would complement the turnovers beautifully!

To make turnovers, roll biscuits into circles. Fill center with the berry mixture and fold the dough over in a crescent shape. Crimp edges with a fork and bake at 350º on an ungreased baking sheet until golden brown. Sprinkle with granulated sugar.

My favorite berry are blueberries. This cobbler sounds amazing, too. Can you believe I have never had a cobbler before? Crazy, right?

Blueberries are my absolute faves. What’s not to love about them? I have not tried any blueberry dish that isn’t good plus they always look good in photos. And, they’re my favorite antioxidants.

PS.
Your Red, White, & Blue Cobbler is mouthwatering .. looks sinful but I’m sure it’s super good!

Well that is a really cute way to serve cobbler. It won’t be long until the 4th of July is here… this would make a great dessert to serve.

You can say that again! As soon as school is out and summer is in full swing, I want to make pies and cobblers for all of our backyard get togethers! I think there’s just something about fruit that screams SUMMERTIME!

Looks so yummy! I love cobbler – usually it’s apple for us, because that’s the only fruit we can all agree on, lol! I do love berries though, especially blueberries and raspberries!

Strawberries are my favorite. I also love wild blackberries. They grow almost everywhere back in my hometown. During the summer we just stop the car by that side of road, get out and pick berries.

Reply
Alli May 19, 2015 - 12:12 pm

I LOVE wild blackberries and plums! I don’t see them like I did when I was growing up. We’d pick a paper bag full of blackberries and mama would make cobbler. Oh, my!

Kisa Johnson May 18, 2015 - 1:28 pm

Aww, I love the star shape! I can’t believe that is just canned biscuits cut into shapes. They’re positively perfect! I think a couple of my kiddos would like this, they like fruit a lot more than I do.

My favorite berry is the strawberry. I’d love to toy around with a few more recipes this summer. I think I’d do OK with something simple like the turnover. Send over a few well wishes, I really want to try these.

Thanks, Mary! I like this particular cobbler because it’s easy and it’s not overly sweet and that leaves room for a big scoop of vanilla ice cream. 🙂

I’m curious where they get their fresh berries from. Do they source it from their own farm or they have a trusted supplier that provides the berries for over a century now?

Reply
Alli May 19, 2015 - 12:07 pm

According to their website, http://www.driscolls.com/about/our-heritage, they have been farming for over 100 years and the berries are grown on family farms.

Yum! This is amazing. I love the little stars. My kids are huge berry freaks. I’m not so much a berry fan, I know it’s weird to say but I’m more of a banana/grape gal. That said I may have to try this for my kiddos!

My favourite berry is the raspberry! I love that they grow about ten minutes away from my house at a farm so we get fresh ones in the Summer. I wish we had canned biscuits in the UK though, this looks amazing!

Reply
Alli May 19, 2015 - 11:58 am

You could use pie crust, too, since the berry portion cooks separately from the “biscuit” cobbler. 🙂
