Lately, my mind has been on all things grapefruit. Citrus is one of my all-time favorite flavors. My Virgin Pink Grapefruit Mojito combines citrus, mint leaves, and flavored water. The end result is a refreshing drink, perfect for spring and summer.

Virgin Pink Grapefruit Mojito

Mint is a herb that’s super easy to grow. It’s estimated that 13-18 species of mint exist. If you plan on growing mint, plant it in a separate container from other herbs. It has a tendency to be large and in charge and will take over in a heartbeat.

Mint has several benefits, including relief for nausea, fatigue, and headaches. Of course, we all know that mint is a well-known breath refresher. Mint is also one of the main ingredients in my Virgin Pink Grapefruit Mojito.

Let’s make a Virgin Pink Grapefruit Mojito

This is a simple drink to make. However, a cocktail shaker really comes in handy with this one. You don’t want big, fat chunks of grapefruit floating around in your drink, so the strainer in the cocktail shaker eliminates the chunks. Also, a cocktail shaker is inexpensive and it’s a great tool to have on hand.

My Virgin Pink Grapefruit Mojito makes two servings. You’ll need 1/4 of a pink grapefruit, cut into small pieces. Be sure and remove the white pith that encases each section of grapefruit. It’s extremely bitter.

You’ll also need honey, about 12 mint leaves, and grapefruit soda or flavored water. I use flavored water to keep the calories down.

Place the grapefruit chunks, honey, and mint in a cocktail shaker. Using a muddler, mash the fruit until the juice is released. Add one cup ice cubes and a half cup flavored water. Attach the lid and shake it like it’s hot.

How to Make a Pink Grapefruit Mojito

Divide between two ice-filled glasses. Top off with flavored water and garnish with mint sprigs.

Ingredients

  • 1/4 pink grapefruit, cut into small chunks, seeds removed
  • 2 Tablespoons honey
  • 12 fresh mint leaves, torn
  • 1/2 cup grapefruit flavored water
  • Ice cubes
  • Mint sprigs, for garnish

Instructions

  1. Place the grapefruit pieces, honey and mint in a cocktail shaker. Mash the fruit with a muddler until the juices are released.
  2. Add one cup small ice cubes. Attach the lid and shake well until combined.
  3. Divide between two ice-filled glasses.
  4. Top off with additional flavored water.
  5. Garnish with mint sprigs

This sounds yummy. Mojitos are one of the few drinks I enjoy but alcohol really messes with my stomach.

That sounds like such a great drink to have. I could see myself on a patio somewhere with a big straw hat, a bathing suit, flipflops and a glass of that in my hand. Sounds delicious. Yum!

This looks delish! Funny how we have fixation of specific foods sometimes. I’m all about pineapple juice at the moment… I mix it 50/50 with coconut water and add some chia in there. YUM!
