I always look forward to Christmas Eve. Santa is gearing up for a long night, but I’m getting ready to wind down. All the shopping is done, the gifts are wrapped and now it’s time to relax and enjoy my favorite night of the year.
Our big holiday meal is scheduled for noon on Christmas Day, but on Christmas Eve, we enjoy an informal soup and salad supper. The soups and salads vary each year and this year I’m making Bacon-Topped Corn Chowder in the slow cooker. I always stock up on our favorite Coca-Colaâ„¢ beverages a few days ahead of time. I store the Coca-Cola and Diet Coke® in the fridge because we like them ice-cold.
There’s just something about drinking a cold Coca-Cola out of the classic glass bottle. When I was in high school, a friend of mine’s grandmother had an old-fashioned Coca-Cola refrigerated chest in her house. I thought my friend was the luckiest girl alive. It even had the opener built right in and her grandma kept it stocked with glass bottles of Coca-Cola.
When it comes to preparing meals, I rely on my slow cooker all year long. It especially comes in handy during the busy holiday season. Crank up the Christmas carols, grab an ice cold bottle of Coca-Cola and let’s make Bacon-Topped Corn Chowder.
Bacon-Topped Corn Chowder
This is one of my favorite chowders because you add all the ingredients to the slow cooker and a few hours later dinner is ready.
Place potatoes, onion, and corn in a slow cooker.
Add chicken broth, seasonings and evaporated milk.
Cook on high for 3 hours (or until potatoes are cooked through).
About 30 minutes before the chowder is ready, cook the bacon and let cool.
Helpful Hint: I always cook bacon in the oven to save time on cleanup. Plus, it stays flat and doesn’t curl up. Preheat the oven to 400º and line a baking pan with foil. Arrange bacon slices in a single layer. Bake for 15-20 minutes or until crispy.
Slow Cooker Bacon-Topped Corn Chowder
Ingredients
- 1 can cream-style corn
- 2 cans whole kernel corn
- 1-1/2 pounds red potatoes
- 1 medium onion, chopped
- 1 cup chicken stock
- 1/2 tsp. garlic powder
- 1/2 tsp. pepper
- 1 tsp. salt
- 1/2 tsp. garlic powder
- 1 can evaporated milk (12 oz.)
- 1/2 pound bacon, cooked and chopped
Instructions
- Place potatoes, onion and corn in a slow cooker (6 quart).
- Add chicken stock, seasonings and evaporated milk.
- Cook on high heat for 3 hours or until potatoes are tender. (Or cook on low for six hours.)
- About 30 minutes before the chowder is ready, cook the bacon and let cool.
- Ladle chowder into bowls and top with bacon.
On Christmas Eve, I enjoy a holiday movie marathon with my family while the lights twinkle on the tree in the background. Slow Cooker Bacon-Topped Corn Chowder, Cornbread, and our favorite bottles of Coca-Cola beverages add up to an easy, delicious meal. And I get extra time to relax with the family. It truly is the most wonderful time of the year!
