Red, White & Blue Cobbler
  • 1 pt. fresh Driscoll's raspberries
  • 1 pt. fresh Driscoll's blueberries
  • ½ cup granulated sugar
  • 1 Tablespoon lemon juice
  • 2 cans refrigerated biscuits
  • 1 Tablespoon sparkling sugar (or regular sugar)
  • Vanilla ice cream or whipped cream, optional
  1. Preheat the oven to 400ยบ.
  2. Combine first 4 ingredients in a medium saucepan.
  3. Cook over medium-high heat for 8 minutes or until bubbly and the sugar dissolves.
  4. Remove from heat.
  5. Separate biscuits and flatten slightly. Cut with a 3-inch star-shaped cookie cutter and place on a baking pan sprayed lightly with cooking spray.
  6. Sprinkle with sugar, pressing slightly.
  7. Bake for 8 minutes or until lightly browned.
  8. Spoon berry mixture into bowls. Top with biscuits.
  9. Serve with vanilla ice cream or whipped cream.
