Sweet Potato Pancakes
  • 1 cup self rising flower
  • 1 cup white whole wheat flour
  • 1 T baking powder
  • 2 T brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of nutmeg
  • 2 cups almond milk (or whole milk)
  • 2 eggs
  • 8 oz. jar sweet potatoes (baby food)
  • Powdered sugar, butter and syrup (optional, for topping)
  1. Whisk all ingredients together until smooth. Cook pancakes in batches in skillet sprayed with veg. oil spray between each batch, on med. high heat. When bubbles begin to burst, flip pancakes over and cook until done. Sprinkle pancakes with powdered sugar, top with a pat of butter and syrup. This recipe makes about 20 pancakes using a ¼ scoop of batter for each pancake. Enjoy!
