• 1 pie crust (bought or homemade)
  • 1 medium onion, chopped
  • 2 T all purpose flour
  • 1 medium tomato, thinly sliced
  • 8 slices bacon, cooked crisp and crumbled
  • 2 cups shredded mozzarella cheese
  • Lettuce
  1. Preheat oven to 400. Mix chopped onion and flour and sprinkle onto the pie crust. Top with tomato slices, bacon and cheese. Bake pie, uncovered, for about 25 minutes, or until cheese is melted. Sprinkle with lettuce.
  2. Variation: I sometimes add ½ cup mayonnaise to the cheese and mix it up before spreading it on the BLT pie. My family actually likes it better than the original recipe. Both ways are delicious!
