Homemade Hot Cocoa
  • ½ cup plus 1 Tablespoon unsweetened cocoa powder
  • ½ cup sugar (or low calorie equivalent of your choice)
  • ⅛ teaspoon salt
  • 6 cups milk (I have used almond milk with great results)
  • ½ teaspoon vanilla extract
  • Marshmallows or whipped cream
  1. In a 3-quart saucepan, stir cocoa with sugar and salt until mixed. Stir in a small amount of milk to make a smooth paste; stir in remainder of milk. Heat over medium heat until tiny bubbles form around edge, stirring occasionally. Remove from heat and add vanilla. Whisk until smooth and foamy. Pour into 6 cups. Top with marshmallows or whipped cream.
  2. Note: For Christmas, I dip the rims of the cups in water and then in crushed candy canes before filling with hot cocoa. It's festive and adds a little mint flavor to the cocoa.
