Hit or Miss – Shrimp Taco Bites

It’s that time of the week again!  Yep, it’s time for hit or miss.  If you read my post last Wednesday, then you know that last week’s hit or miss was a disaster!  You can read all about my foray into lip balm making here!

Yesterday I tried a new recipe that I found on Pinterest – Shrimp Taco Bites!  I have to tell ya that the picture on Pinterest made me want to jump through my computer screen and take a bite.

Shrimp Taco Bites are sort of like a shrimp taco, but in a smaller, prettier, bite-sized party portion.  And I just can’t wait any longer to give you the verdict!

These babies were a big fat hit and so easy to prepare!  There’s a hint of heat from the chipotle, combined with the smooth creaminess from the sour cream.  Then the avocado, chopped cilantro, lime zest, and lime juice hits the taste buds right along side the crispiness of the tortilla chip and wham, it’s the perfect bite.

I will certainly make these again and again.  I can see myself making the spice mixture to coat the shrimp, the sour cream combination and the avocado/lime duo and putting all three bowls in the fridge before a party (except for the shrimp and tortilla chips) and at the last minute, baking the shrimp and putting it all together in the tortilla scoops.  I can also see whipping this up at the beach this summer when the entire family gets together.  Oh, yes, Shrimp Taco Bites are definitely a big hit!

Oh, yeah, I took the pictures and then realized I had left off the chopped cilantro.  They are really pretty with the cilantro.  Duh!

  1. Oh I bet my husband and boys would just love these! Personally, not a shrimp fan, but I might do it, if it were popcorn shrimp.

    • My husband is a big fan of shrimp. I’m not. I just use the baked tortilla scoops and eat them with everything except the shrimp. 🙂

  2. I can see how the pictures made you want to try it. Glad it was a hit! I just read that avocado is supposed to be so healthy for women. It has a shape of a womb and is good for it. That makes your recipe even better ;).
