Sheet pan dinners are becoming my favorite go-to meals. The entire meal cooks in one pan. Cleanup is a breeze and dinner is ready in 30 minutes. 

My Easy Sheet Pan Pork Tenderloin Dinner is full of flavor and it’s a hit with the entire family. What’s not to love?

Springtime is busy around here! Baseball is in full swing and I have four grandsons playing on four different teams. I admit that keeping up with the schedules can be difficult. At least dinner doesn’t have to be!

This quick and easy meal is perfect for busy weeknight meals. But, don’t stop there. This one-pan dinner is also the perfect meal when you’re entertaining. Add a light dessert and you’re good to go.

Pork Tenderloin Dinner with Sweet Potatoes and Asparagus

One Pan Golden Rotisserie Pork Tenderloin Meal

The beauty of this one-pan meal is that you can change up the vegetables to suit your taste. Since my family enjoys sweet potatoes and asparagus with the flavorful tenderloin, that’s how we roll. However, you can switch up the vegetables if you’d like.

One Pan Pork Tenderloin Dinner with Sweet Potatoes and Asparagus

Peel the sweet potato and cut into rounds. Cut the rounds into wedges. Toss with olive oil, salt, and pepper and add to the sheet pan.

Trim the woody ends off of the asparagus. This doesn’t take long at all. Bend the ends of the asparagus between your thumb and forefinger.  The asparagus will automatically break where the woody part ends.

Helpful Hint: I like for the asparagus to be crispy-tender so I choose asparagus with thick stalks.

Use an instant-read thermometer to make sure the Smithfield Fresh Pork Tenderloin is done. When it registers 150º F, it’s cooked perfectly.

Be sure to let the tenderloin rest for five minutes before serving to ensure juicy, tender pork. The juices rise to the surface during the cooking process and will settle and return to the center during the resting time.

Pork Tenderloin Dinner with Sweet Potatoes and Asparagus

This entire pork tenderloin meal cooks in one pan. The asparagus and sweet potatoes pair perfectly with the pork tenderloin.

Prep Time 10 minutes
Cook Time 25 minutes
Additional Time 5 minutes
Total Time 40 minutes

Ingredients

  • 1 Smithfield Slow Roasted Golden Rotisserie Flavor Pork Tenderloin
  • 2 Tablespoons olive oil
  • 1 pound thick-cut asparagus spears, trimmed
  • 1 pound sweet potatoes, peeled and cut into wedges

Instructions

  1. Preheat the oven to 425º F.
  2. In a large bowl, toss asparagus and sweet potatoes with olive oil. Sprinkle with salt and pepper to taste.
  3. Place asparagus and sweet potatoes around the edges of a sheet pan. Add the Smithfield Slow Roasted Golden Rotisserie Flavor Pork Tenderloin to the center of the pan.
  4. Roast for 25-27 minutes, until a meat thermometer registers 150º F.
  5. Let rest for five minutes before slicing and serving.

My husband loves pork but I don’t make it that often as I feel like I always have to look up some kind of recipe. I have heard it but never tried it before. The fact that this has real ingredients and it’s own marinate makes it worth the try.
