Red, White & Blue Cupcakes

by Alli

July 4th will soon be here and I’m ready to celebrate! Of course, I always make a patriotic dessert and I try to make something different each year. These red, white & blue cupcakes are perfect for a patriotic celebration. These cupcakes made the cut for my best cupcake recipes

A few days ago I was in Walmart and spotted a red, white and blue cake mix by Duff Goldman. I grabbed it.  I figured it was an easy way to make my first tri-colored batter and I was right!  Instead of making a cake, I made Red, White & Blue Cupcakes.

I was thrilled when Duff Goldman retweeted my tweet about how good these Red, White & Blue Cupcakes are and how easy they are to make.

Patriotic Cupcakes

The cake mix includes 2 tiny packets of food coloring and a packet of red, white and blue stars.  The cupcake liners and tiny flags came from Hobby Lobby.

Red, White & Blue Cupcake Batter

The cupcake directions are a little different (easier) than the cake directions.  You just drop one spoonful each of the different colored batter randomly into each cupcake liner.

Red, White & Blue CupcakesBake according to the directions on the cake mix box and you’re done!

Red, White & Blue Cupcakes

I added cream cheese frosting, sprinkles and stuck a tiny flag into each cupcake.  The best part?  According to my family, these cupcakes are as delicious as they are pretty!  And you don’t have to tell anyone how easy they were to make!Patriotic Cupcakes

Ingredients

  • 1 Red, White & Blue Cake Mix Plus Ingredients (mix and bake according to package directions)
  • Cream Cheese Frosting
  • 1/2 cup butter, room temperature
  • 8-oz. cream cheese, room temperature
  • 3 cups powdered sugar
  • 1 tsp. vanilla extract

Instructions

  1. Mix and bake cupcakes according to directions on the cake mix box.
  2. Beat together the butter and cream cheese with an electric mixer at medium speed. On low speed, add the powdered sugar a cup at a time until smooth and creamy. Add vanilla and mix well.

Notes

If you can't find a red, white and blue cake mix, use a white cake mix and add red food coloring to 1/3 of the batter, blue food coloring to 1/3 of the batter and leave 1/3 of the batter white. Drop by spoonfuls into paper-lined cupcake tins. Bake according to cake mix directions.

Great idea! I think I may make a red and white version, because I’m in Canada. Of course, I’ll have to get different cake mix, but using your icing recipe would be perfect! Thanks for the idea!
