No Churn Rocky Road Freeze

No ice cream maker?  No rock salt?  No problem!  My Rocky Road Freeze does not require either of those two things.  All you need is these six ingredients!  (Full printable recipe at the end of the post).

I once had an ice cream maker that sat all alone on a top shelf in my laundry room because that’s the only place it would fit.  I was always going to make homemade ice cream just like we did when I was growing up.  I collected lots of recipes.  But it just didn’t happen.  And because I’m a minimalist, read all about it here, I just had to donate it.

I may buy another one some day.  But with this creamy, delicious confection, who needs it?

Mix together the chocolate syrup and sweetened condensed milk.

After beating the whipping cream until stiff peaks form, fold it all together.

Pour mixture into freezer proof container , cover and freeze for at least five hours.

Rocky Road Freeze
 
Ingredients
  • 1 can sweetened condensed milk (14 oz.)
  • ½ cup chocolate syrup
  • 2 cups whipping cream
  • 1 cup mini marshmallows
  • ½ cup mini chocolate chips
  • ½ cup salted peanuts, chopped
Instructions
  1. In a small bowl, combine the sweetened condensed milk and chocolate syrup; set aside. In a mixing bowl, beat cream until stiff peaks form. Fold in chocolate mixture, marshmallows, chocolate chips and peanuts. Transfer to a freezer proof container and freeze for 5 hours or until firm. Remove from freezer 10 minutes before serving. Yield: 1-1/2 quarts
