Here in the south, we love our sweet tea almost as much as we love grilling ribs. I always have a gallon of tea chilling in the fridge and that’s what inspired me to create a new recipe, Ginger and Sweet Tea Infused Grilled Ribs. My husband says it’s a keeper and I totally agree.

How to Make Ginger and Sweet Tea Infused Grilled Ribs

A few days ago my son sent me a text asking when we were planning to grill ribs again. He’s in luck because it’s going down this weekend. I stopped by Walmart a few days ago to stock up on all my grilling needs including Smithfield Fresh Pork.

Since my husband is the pitmaster of our grill, we always use Smithfield Extra Tender Pork Back Ribs, too. Smithfield Ribs are his secret weapon for making great ribs on the grill.

Smithfield Fresh Pork is always hand-trimmed, extra-tender and juicy. Plus, they have no added hormones or steroids. I love that I can grab quality meat at my local Walmart.

If you’ve never grilled ribs before, I’m going to show you how easy it is. Plus, cleanup is always a breeze.

Ginger and Sweet Tea Infused Grilled Ribs

Sweet Tea Marinade

First, let’s make the sweet tea marinade for the Ginger and Sweet Tea Infused Grilled Ribs. Bring two cups water to a boil in a small saucepan. Remove from heat and add three family size tea bags. Let steep for 10 minutes.

Add a cup of sugar to a pitcher. Pour steeped tea over sugar and stir until dissolved. Add two cups water to the pitcher, give it a stir and let come to room temperature.

Make the Rub

Place Smithfield Extra Tender Pork Back Ribs in a 13 x 9 glass baking dish, meat side down. Pour sweet tea over the ribs and refrigerate for two hours.

Add some spice

Combine the spices together for a dry rub. Thirty minutes before grilling, remove the ribs from the marinade and sprinkle both sides with the rub. Discard remaining marinade.

Preheat the Grill

We like to use the charcoal grill when we’re grilling ribs. Form a pyramid of 30-40 no-lighter-fluid-needed charcoal briquettes on the bottom of the grill. Light the briquettes with a long match or a grill lighter.

Once the charcoal briquettes are covered with gray ash, spread them out to one side of the grill for indirect heating.

Place the rack of ribs bone side down on the grill. Cover and cook for about one and a half to two hours. Ribs are done at 180-190° F when checked with an instant-read thermometer. That’s it!

How to Make Sweet Tea Infused Grilled Ribs

Ingredients

  • Smithfield Extra Tender Pork Back Ribs

Marinade

  • 3 family size tea bags
  • 4 cups water
  • 1 cup sugar

Dry Rub

  • 1 teaspoon ground ginger
  • 1 Tablespoon onion powder
  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 2 teaspoons garlic powder
  • 1 Tablespoon paprika
  • 1/2 Tablespoon sea salt

Instructions

  1. Make the sweet tea by heating 2 cups water on high in a medium saucepan. Once the water reaches a low boil, remove from the heat and add 3 family size tea bags. Let steep for 10 minutes. Add sugar to a pitcher and pour steeped tea over the sugar. Stir until dissolved. Stir in two cups water. Let tea cool to room temperature.
  2. Place the ribs, meat side down, in a 13x9 glass baking pan. Pour the tea over the ribs and place in the refrigerator for two hours.
  3. Thirty minutes before grilling, remove the ribs from the sweet tea and discard tea.
  4. Mix the dry rub ingredients together and sprinkle over both sides of the ribs.
  5. Place ribs, meat side down, on a preheated charcoal grill and cover. Grill for one and a half to two hours.

Parmesan Topped Baked Tomatoes & Sweet Tea Infused Grilled Ribs

I serve my Ginger and Sweet Tea Infused Grilled Ribs with baked beans and parmesan topped baked tomatoes and this meal always gets rave reviews. The tomatoes are easy to make as well. Slice a large tomato into three thick slices. Sprinkle with grated parmesan cheese, salt, pepper, and Italian seasoning. Bake at 400º F for 5 minutes or until cheese is golden.
