When my son was in his freshman and sophomore years of college, he seemed to bring home a new girlfriend to meet “the parents” every three months. Thankfully, he’s grown up (kinda) and is past that infatuation phase.

Fast forward a few years and he’s now engaged to be married in November. What does that have to do with Cheesy Egg Roll and Tater Tot Breakfast Bake? Just keep on reading.

Hosting Weekend Guests

During those college years, I learned how to host weekend guests like a pro. I finally perfected the get-the-guest-room-ready-in-mere-minutes with a welcome basket and clean sheets on the bed.

To keep from spending the entire weekend in the kitchen, I created Cheesy Egg Roll and Tater Tot Breakfast Bake.

Egg Rolls for breakfast? Sure! Why not?

Van’s Kitchen Egg Rolls are a favorite snack at my house. It’s also a great way to sneak in extra veggies.

They’re full of freshly chopped carrots, onions, celery, and cabbage and the kids (even college kids) don’t have to know about the extra veggie boost.

Cheesy Egg Roll and Tater Tot Breakfast Bake

Brown a pound of ground sausage and drain. Mix the sausage with the tater tots and one cup shredded cheese.

Cheesy Egg Roll Bake

Place in a greased casserole dish or baking pan. Combine the eggs, milk, and seasonings together and pour over sausage mixture.

Steps to Making Cheesy Egg Roll Bake

Bake at 350º for 30 minutes.

Time to Slice the Egg Rolls!

Meanwhile, slice Van’s Kitchen Egg Rolls.

Chop the egg rolls for the Cheesy Egg Roll and Tater Tot Breakfast Bake

Top the breakfast bake with the egg roll slices and the remaining cup of cheese.

Top Cheesy Egg Roll and Tater Tot Breakfast Bake with remaining cheese and egg roll slices.

Bake for 20 more minutes.

This breakfast casserole is a little different from most. You'll love the flavor combination.

Prep Time 15 minutes
Cook Time 50 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 1 lb. ground sausage
  • Frozen Tater Tots (32 oz.)
  • 2 cups shredded cheddar cheese, divided
  • 8 eggs
  • 1 cup milk
  • Pinch of salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. onion powder
  • 1 package Van's Kitchen Pork Egg Rolls, sliced

Instructions

  1. Preheat oven to 350º.
  2. Brown sausage in a large skillet. Cook, stirring occasionally until browned. Drain.
  3. In a large bowl, gently combine the tater tots, sausage, and 1 cup shredded cheese.
  4. Pour into a greased casserole dish or a 13x9 baking pan.
  5. Whisk the eggs, milk, and seasonings and pour over the sausage mixture.
  6. Bake for 30 minutes.
  7. Remove from oven and top with sliced egg rolls and the remaining cup of shredded cheese.
  8. Return to oven and bake for 20 minutes.

It would be a great appetizer. You should also try it for breakfast/brunch – it’s full of sausage, eggs, potatoes and the egg rolls add a delicious crunch. 🙂 My bunch loves it any time of the day.
