Lemon Blueberry Bundt Cake


eggs sugar butter  vegetable oil vanilla extract buttermilk  Greek Yogurt  Lemon Juice yellow food coloring (optional) all-purpose flour baking powder baking soda salt fresh blueberries

To make the glaze, you'll need:

powdered sugar lemon juice

Step 1

 Beat together eggs and sugar. Add butter and oil. Add vanilla extract,  Add in buttermilk, Greek yogurt, lemon juice, zest of 2 Lemons, and yellow food coloring .

Step 2

Sift together flour, baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients. Fold in blueberries. Spoon batter into prepared bundt pan. Bake for 55 minutes.

Step 3

Let the cake cool on a wire rack on the countertop for 15 minutes before removing from the pan.  

 Make The Glaze

 In a medium bowl combine the powdered sugar and 2 Tablespoons of lemon juice. Whisk to blend. Drizzle glaze over the cooled bundt cake. Sprinkle with lemon zest.
