Easy Zesty Corn Salad

I do believe I could eat Tex-Mex every day! And this Zesty Corn Salad packs so much flavor. 

My youngest grandson inherited my love of zesty, bold flavors and he hangs right with me when we’re eating our favorite spicy foods.

He’s only five, but he’s willing to try new foods, especially if they have a kick to them. My Zesty Corn Salad fits the bill. It’s easy to make and if we have leftovers, the family has a lively discussion over who gets to take the Zesty Corn Salad home.

Easy Zesty Corn Salad

While my husband grills marinated pork chops, I make the Zesty Corn Salad. The bold, vibrant colors, the fresh veggies mixed in, and the ease in preparing the dressing makes this a dish you’ll make over and over. I promise!

Ingredients You’ll Need

  • frozen corn, thawed and drained
  • drained can of RO*TEL
  • spring (green) onions, thinly sliced
  • diced orange bell pepper
  • cilantro (if you don’t care for cilantro, just leave it out.)

For the dressing, you’ll need:

  • vegetable oil
  • red wine vinegar
  • Juice and zest of one lime
  • minced garlic
  • cayenne pepper (just a pinch!)
  • salt

How To Make Zesty Corn Salad

Place a bag of frozen corn in a colander. Run water over the corn until it’s thawed. Drain well.

Zesty Corn Salad Recipe

Mix the corn with one can of RO*TEL. Add sliced spring (green) onions, a chopped orange bell pepper, and chopped cilantro.

Add one can of RO*TEL to Zesty Corn Salad

In a small bowl, whisk together vegetable oil,  red wine vinegar, zest and juice of one lime, minced garlic, cayenne pepper, and salt.

How to Make the Dressing for Zesty Corn Salad

Pour the dressing over the corn and toss gently.

Zesty Corn Salad is full of flavor and is the perfect summer side dish.

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 package (12 oz) frozen corn, thawed and drained
  • 1 can RO*TEL, drained
  • 3 spring (green) onions, thinly sliced
  • 1 orange bell pepper, diced
  • 1/2 bunch cilantro

Dressing

  • 1/4 cup vegetable oil
  • 3 Tablespoons red wine vinegar
  • Juice and zest of one lime
  • 1 teaspoon minced garlic
  • 1/8 tsp. cayenne pepper
  • 1 teaspoon salt

Instructions

  1. Place corn in a colander and run cold water over to thaw. Drain well.
  2. Place corn in a large bowl and add the drained RO*TEL, onions, bell pepper and cilantro.
  3. In a small bowl, whisk together the oil, red wine vinegar, lime juice and zest, garlic, cayenne pepper and salt.
  4. Add the dressing to the corn mixture and toss gently until well combined.
  5. Refrigerate leftovers.

Zesty Corn Salad

Walmart has everything I need to make my Zesty Corn Salad. Whenever I’m shopping, I always stock up on RO*TEL because it’s so versatile. It’s a delicious addition to my Black Bean Chili and Pimento Cheese Spread.

My Zesty Corn Salad is the perfect side dish for grilled fish or burgers and I always make it when the family visits the beach.

Your grandson is a brave little chap to try new foods so willingly – I used to have to play all sorts of games with my daughter when she was 5 🙂
Btw – your zesty corn salad sounds wonderful – I love that dressing with the RO*TEL and corn – makes each spoonful a fiesta in my mouth!

I’m with you – I love Tex-mes food – my husband and I both do, my kiddos – not so much. BUT, I use Rotel with canned sweet corn AND some white beans – SO delish!
