We grill out a lot during the summertime and not just on weekends. Why wait for the weekend to enjoy eating outside? It’s just as easy to grill out on a Monday as it is on a Saturday.

Since Monday dinner is usually meatless at my house, I have the perfect weeknight meal that the whole family will love and is super easy to prepare. My family loves cooking out when it includes my Coconut Carrot Salad and NEW MorningStar® Farms Meat Lovers Burgers.

After planning my menu for the week, it’s so easy and convenient to use Walmart’s Online Grocery Pickup service. Meatless Monday has never been so easy!

How to Make Coconut Carrot Salad

Plump raisins in warm water for five minutes. Drain. In a medium-sized bowl, add the shredded carrots, raisins, and coconut flakes.

Coconut Carrot Salad is the perfect side dish for Meatless Monday

Whisk together the olive oil and lime juice. Pour the juice mixture over the carrot mixture and toss together until well mixed. Refrigerate until ready to serve.

Coconut Carrot Salad is so easy to put together

After making the salad, I let it chill in the fridge while my husband fires up the grill. We add a few ears of corn alongside the Meat Lovers Burgers and dinner is done in only 10 minutes! Slather the corn with a little sour cream, parmesan cheese, and chili powder. Grab the coconut carrot salad from the fridge and let everyone add their favorite toppings to the Meat Lovers Burgers.
