Since Monday dinner is usually meatless at my house, I have the perfect weeknight meal that the whole family will love and is super easy to prepare. My family loves cooking out when it includes my Coconut Carrot Salad and NEW MorningStar® Farms Meat Lovers Burgers.

How to Make Coconut Carrot Salad
Plump raisins in warm water for five minutes. Drain. In a medium-sized bowl, add the shredded carrots, raisins, and coconut flakes.
Whisk together the olive oil and lime juice. Pour the juice mixture over the carrot mixture and toss together until well mixed. Refrigerate until ready to serve.
After making the salad, I let it chill in the fridge while my husband fires up the grill. We add a few ears of corn alongside the Meat Lovers Burgers and dinner is done in only 10 minutes!
Slather the corn with a little sour cream, parmesan cheese, and chili powder. Grab the coconut carrot salad from the fridge and let everyone add their favorite toppings to the Meat Lovers Burgers.
Coconut Carrot Salad
This carrot salad is full of flavor because of the added coconut flakes and lime juice.
Ingredients
- 4 cups shredded carrots
- 1/2 cup raisins
- 6 Tablespoons sweetened coconut flakes
- 2 Tablespoons olive oil
- Juice of one lime
- Salt and pepper to taste
Instructions
- Plump raisins in a cup of warm water (5-10 minutes).
- Toss shredded carrots, raisins and coconut in a medium sized bowl.
- Whisk together the olive oil and lime juice.
- Pour the olive oil and juice mixture over the carrot mixture. Toss well.
- Refrigerate until ready to serve.

Although I am not a vegetarian I do love MorningStar foods. They have a lot of stuff that absolutely taste wonderful and I use it when I am in the mood for something besides meat to.
I love MorningStar products and usually have them and Boca burgers in my freezer. I didn’t know about the quarter pound burgers so I will look for those the next time I’m in the grocery store.

I love carrots and I love coconut but I have tried them together! I bet it tastes awesome. We are huge fans of Morningstar products, their burgers and crumbles are awesome.
That looks like a restaurant quality meal. Admittedly we haven’t grilled in our backyard hardly at all this year, but we’ve grilled while camping, so I think that counts.

Been trying to limit mymeat intake for some time now and it would be nice to eat recipes that I used to enjoy without the guilt. Those vegan burgerd look amazing and I definitely would love to try that coconut carrot salad!!! Yum!!
