Shrimp & Grits – And the Winner Is . . . .

This was the main dish for my special Valentine’s Day Dinner for hubby and me.  Tonight we are going to get all dolled up (evening gown) and go to a Valentine’s Day party so last night was a romantic dinner for two.  I need to go practice the Cupid Shuffle – to the right, to the right . . . .

My romantic little candlelit dinner was a smashing success!  We started with a chilled strawberry soup (recipe will be posted next week).  Our entree was shrimp and grits, of course, and roasted asparagus, corn on the cob, and mini Baguettes.  I fixed a very simple dessert, one of my husband’s favorite, freshly-baked chocolate chip cookies with Haagen-Dazs vanilla bean ice cream.

Shrimp & Grits (Bobby Flay – Food Network)

4 cups water
Salt and pepper
1 cup stone-ground grits
3 tablespoons butter
2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
4 teaspoons lemon juice
2 tablespoons chopped parsley
1 cup thinly sliced scallions
1 large clove garlic, minced

grits2Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese.

Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes.

Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

What I tweaked:  I had a bag of quick (5 minute) grits so that is what I used.  I made two servings.  Also, as the water was coming to a boil, I threw in just a pinch of cayenne pepper to heat things up a bit.  I reduced the amount of cheese to a cup and I used minced garlic from a jar.  That’s how I roll.
