No-Churn-Rocky Road Ice Cream

Homemade Rocky Road Ice Cream is so easy to make. You don’t even need a churn!

A few years ago, I was in one of my get-rid-of-everything-I-never-use moods and I donated my seldom used electric ice cream churn. Of course, a few months down the road, I had a bright idea to make homemade ice cream.

It dawned on me that I didn’t have an ice cream churn. Duh! So, I made No Churn Rocky Road Ice Cream. This stuff is seriously good and so easy to make.

No Churn Rocky Road Ice Cream is my husband’s favorite. This faux ice cream is filled with chocolate chips, mini marshmallows, and salted nuts. I could almost drink it before placing it in the freezer to harden, but I always make myself wait.

No Churn Rocky Road Ice Cream Waffle Cone

A few days ago, I made No Churn Rocky Road Ice Cream when the family came over and everyone raved about this delicious frozen treat.

My daughter asked if I’d make it for her birthday. Of course, I will. It’s so easy to throw together. I always make it the night before since it needs to freeze for at least five hours.

Not-So-Funny Story

My favorite ice cream scoop of all is the old one from Pampered Chef. (I’m not an affiliate of Pampered Chef. I just like their stuff). It’s filled with some type of liquid that enables you to scoop out frozen ice cream with ease.

However, it’s not dishwasher safe. No matter how many times I’ve begged and pleaded with my family to keep it out of the dishwasher, it somehow ends up there.

This past Sunday when all 16 members of my family were here for lunch, I had a make-your-own sundae bar for dessert. I served my homemade no churn Rocky Road Ice Cream and Blue Bunny Vanilla plus a pile of toppings.

When I grabbed my trusty ice cream scoop, this horrible black stuff came off the scoop and left tracks in the vanilla ice cream. Yuck! Glad it wasn’t the rocky road! I had to scrape away the top layer of the ice cream and the scoop had to die. It was time.

When I tried to find a replacement ice cream scoop, I saw that the Pampered Chef one had been recalled! What? Why didn’t I know? So, now I’m on the hunt for a new ice cream scoop and I’m looking at these.

  •  sweetened condensed milk (14 oz.)
  • chocolate syrup
  • heavy whipping cream
  • mini marshmallows
  • mini chocolate chips
  • salted peanuts, chopped

How To Make No-Churn Rocky Road Ice Cream

In a small bowl, combine sweetened condensed milk and chocolate syrup; set aside.

Syrup and Cream Mixture for No Churn Rocky Road Ice Cream

In a mixing bowl, beat cream until stiff peaks form. Fold in chocolate mixture, marshmallows, chocolate chips and peanuts.

How to Make No Churn Rocky Road Ice Cream
Transfer to a freezer-proof container and freeze for 5 hours or until firm.

Place No Churn Rocky Road Ice Cream in the Freezer

Remove from freezer 5 minutes before serving.

Ingredients

  • 1 can sweetened condensed milk (14 oz.)
  • ½ cup chocolate syrup
  • 2 cups heavy whipping cream
  • 1 cup mini marshmallows
  • ½ cup mini chocolate chips
  • ½ cup salted peanuts, chopped

Instructions

  1. In a small bowl, combine the sweetened condensed milk and chocolate syrup; set aside.
  2. In a mixing bowl, beat cream until stiff peaks form. Fold in chocolate mixture, marshmallows, chocolate chips and peanuts.
  3. Transfer to a freezer proof container and freeze for 5 hours or until firm. Remove from freezer 5-10 minutes before serving. Yield: 1-1/2 quarts
