Did you make any New Year’s resolutions? I always set a few goals to work toward during the new year. I also look back and give myself a pat on the back for sticking with goals from the previous year.
One of my goals is to become healthier this year. That includes adding Easy Avocado Toast with Veggie Bacon to my breakfast menu.
I started a workout program last July and I haven’t missed a day since. I’m giving myself a big pat on the back for that one.
This year, I’m working on eating better. That means planning meals, writing out my grocery shopping lists and adding more plant-based foods to my eating plan.

I’ve always enjoyed creating new recipes for dinner on Meatless Mondays and I’ve even got my husband on board. When I made Easy Avocado Toast topped with MorningStar Farms® Bacon Strips for breakfast, he was sold. These bacon strips deliver the taste we crave while staying on track with our healthier lifestyle.
For me, breakfast was my biggest obstacle when it came to incorporating a healthier lifestyle. When I found the MorningStar Farms® Bacon Strips and the MorningStar Farms® Sausage Patty Value Pack in the freezer section of my local Walmart, I knew I had upped my breakfast game.
Avocados are a superfood so I try to incorporate them into my eating plan 2-4 times a week. When I mash an avocado with a dash of lime juice and some chopped cilantro, it makes the perfect topping for toasted whole-grain bread. To add even more flavor, the avocado is topped with bacon strips and a fried egg. My recipe makes two servings.
Easy Avocado Toast
Toast two slices of multigrain bread in a toaster or in the oven.
Cook bacon strips according to the directions on the package.
While the bacon strips are cooking in one skillet, I fry the eggs in another skillet. Since we like our eggs sunny side up, there is a trick I learned a long time ago to keep the yolk from getting too hard. Don’t flip that egg!
In a non-stick skillet heated on medium heat, add a swirl of olive oil. Crack one egg in a small bowl and carefully add it to the skillet. Repeat the process with another egg. Cook eggs until the edges are browned, about 2 minutes.
Spoon the hot oil over the egg whites – not the yolks – for about one minute. Season with salt and pepper and carefully remove from pan. You will have perfectly runny yolks every single time.
Cut an avocado in half. Remove the pit. With a spoon, scoop out the flesh into a small bowl. Add fresh lime juice and chopped cilantro to the avocado. Salt and pepper to taste.
Combine the ingredients by mashing with a fork.
Top the toasted bread slices with the mashed avocado.
Add bacon strips. You can leave them whole.
Or cut them into smaller pieces.
Top with fried eggs and enjoy!
Avocado Toast With Veggie Bacon
Ingredients
- 1 avocado
- 2 Tablespoons chopped cilantro
- Salt and pepper to taste
- Juice of 1/2 lime
- 2 slices multigrain bread
- 4 strips MorningStar Farms® Bacon Strips
- 2 eggs, fried
Instructions
- Toast two slices of bread.
- Cook bacon strips according to the directions on the package. I use the skillet method.
- Fry eggs.
- Cut the avocado in half. Remove the pit and scoop out the flesh into a small bowl. Add the lime juice, cilantro, salt and pepper and mash together with a fork.
- Spread avocado mixture onto the two slices of toast. Top with bacon strips and eggs.
