What’s your favorite cuisine? Â Mine, hands down, is Mexican food! Â Every time my husband and I visit Mexico we search for the little out-of-the-way authentic restaurants where they make their own tortillas. Â It’s always fun to watch – and eat!
With Cinco de Mayo right around the corner (May 5), I’m one happy girl. Â No, I don’t have the time or the knowledge to make authentic Mexican food, but I’m celebrating with someone who does – Delimex – Â DELI-cious MEX-ican food!
Taking center stage at my family-friendly Cinco de Mayo celebration is my Delimex Taquito Shooters! Â I start with layering a pretty and delicious Mexican dip and then top it off with a taquito.
When planning a party, I try to come up with creative ways to serve food. Â Presentation speaks volumes! Guests always enjoy what I call small bites; individual servings just for them. Â And you don’t have to worry about double dipping!
In addition to the Taquito Shooters, I’m serving Delimex Beef Tamales. They’re flavored with chili and jalapeño peppers and hand-wrapped in real cornhusks.  My guests will think I’ve been slaving away all day. I mean, REAL cornhusks!  It wouldn’t be a party without my frozen margarita mocktails (no alcohol).
With grocery list in hand, I visited my local Walmart and found exactly what I was looking for. Â The tamales and taquitos were found in the open freezers between the meat department and the regular food aisles.
Delimex Taquito Shooters
While the Delimex Taquitos are baking, mix sour cream and seasoning mix together.
Spoon the refried beans, pickled jalapeños, chopped tomatoes, chopped green onions, and shredded cheese into individual bowls.
Layer beans and sour cream mixture into individual glasses.  Top with jalapeños, cheese, tomatoes, and onions.
Delimex Taquito Shooters
Ingredients
- 1 package Delimex Taquitos
- 1 can refried beans
- 16 oz. sour cream
- 1 package zesty sour cream seasoning mix (Mexican food aisle)
- Pickled jalapeños
- 3 medium chopped tomatoes
- 1/2 cup chopped green onions
- 1 cup Mexican cheese, shredded
Instructions
- Bake taquitos according to package directions.
- In a medium-sized bowl, mix the sour cream and seasoning mix until well blended.
- Layer beans, sour cream mixture, jalapenos, cheese, tomatoes and onions in small glasses.
- Insert a taquito into each glass.
- Enjoy!
Funny Story Alert
I have to share a funny story.  While my son was munching on my Delimex Taquito Shooters and Beef Tamales, he kept going on and on about how good the food was.  Then he said, “Mom, this is the best Mexican food you’ve ever made!” I didn’t dare tell him how easy it was!  I’m just going to let him think I rolled those taquitos and wrapped those tamales in corn husks and steamed away.  I’ll never tell! 🙂

I absolutely love this idea! I have a question, though … When using a tall serving dish/glass, are you able to get all the dip out before the taquito gets too short? I’d love to serve these at my next party, but just wonder about the practicality of it. These are gorgeous!
