Helpful Tips For Making Pineapple Agua Fresca

I always use fresh fruit and fresh water when making Agua Fresca. Fresh pineapple yields the best result in this recipe. A ripe pineapple should have a firm shell that is slightly soft when squeezed. 

However, canned pineapple can be used, if necessary. If you want to use the pineapple juice, you’ll need to leave out the water called for in the recipe. If you decide to drain the canned pineapple, keep the water.

This drink is best served immediately. I do not recommend making this recipe in advance as it’s truly best right after being made. It does not keep in the fridge or freezer well.

The sugar keeps the ice from seizing. However, a sugar substitute that’s similar, like monk fruit sweetener, should work.

If you want it sweeter, increase the amount of sugar, but be warned, it buries the pineapple flavor if you make it too sweet.

1. Combine all ingredients (except the garnishes) in a powerful blender and blend for about 2 minutes or until there are no more chunks of ice and pineapple.

2. Unless your blender is pretty powerful, you’ll need a tamper to help the blender grab all the chunks, or something similar.

Notes

  • For best results, use fresh pineapple. If you use canned pineapple and want to add pineapple juice from the can, you’ll need to leave out the water. If you decide to drain the pineapples before use, keep the water.
  • I do not recommend making this recipe in advance as it’s best right after being made. It does not keep in the fridge or freezer well. 
  • Many blenders come with a tamper stick. It's a tool that pushes the chunks down into your blender and helps make a nice and smooth consistency. You can use it while the blender is running.
  • If you don't have a tamper, you can stop the blender during the blending process and scrape down the sides with a spatula.
  • The sugar is important as it keeps the ice from seizing. However, a sugar substitute that’s similar, like monk fruit sweetener, should work. 
  • If you want a sweeter drink, add more sugar, but be warned, it buries the pineapple flavor if you make it too sweet.
