Best Key Lime Sugar Cookies

Key Lime Sugar Cookies have just the right amount of sweetness and tartness! Real lime juice and lime zest add so much flavor to these cookies.

These Key Lime Sugar Cookies are rolled into balls and coated with granulated sugar and lime zest before baking. This recipe makes approximately 36 cookies.

Since this recipe makes about 36 cookies, I always bake these cookies in batches. I can fit about 10 cookie dough balls onto the cookie sheet, spacing 1-1/2 inches apart. 

Key Lime Sugar Cookies Ingredients (full recipe card below!)

  • unsalted sweet cream butter (at room temperature)
  • powdered sugar
  • 1 large egg
  • lime juice
  • lime zest
  • all-purpose flour
  • baking soda
  • cream of tartar

Cookie Coating Ingredients

  • granulated sugar
  • lime zest

Beat the butter, powdered sugar, egg, lime juice, lime zest until fluffy and creamy.

In a medium bowl, whisk the flour, baking soda, and cream of tartar until combined. Gradually beat the dry ingredients into the wet until a soft dough forms.

Using a small cookie scoop, scoop and roll into balls and roll the balls in the lime zest/sugar until completely coated.

Place onto the cookie sheet and bake for 8-11 minutes or until a very light golden color.

How To Know When Sugar Cookies Are Done

Sugar Cookies should be light in color, not brown. Bake the cookies until they are a sandy-blonde color with light golden edges. If you bake them until dark golden brown, they will be overbaked. 

How To Store Sugar Cookies

Store sugar cookies at room temperature in an air-tight container for 3-5 days. If you want to keep them longer, freeze.

To freeze sugar cookies, cool completely. Freeze in layers, separated by parchment paper, in an airtight container, for up to six months.

Ingredients

  • 1 cup unsalted sweet cream butter, softened
  • 1 1⁄2 cups powdered sugar
  • 1 large egg
  • 1 teaspoon fresh lime juice
  • 2 teaspoons lime zest
  • 2 1⁄2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Cookie Coating Ingredients

  • 1 1⁄2 cups granulated sugar
  • 2 Tablespoons lime zest

Instructions

  1. Preheat oven to 350º F. Line a cookie sheet with a silicone baking mat. Mix the granulated sugar and 2 Tablespoons lime zest in a small bowl and set aside.
  2. In a medium bowl, whisk the flour, baking soda, and cream of tartar together. Set aside. 
  3. Using a stand mixer, beat the butter, powdered sugar, egg, lime juice, and lime zest on medium-high until creamy.
  4. Lower the mixer speed to low and gradually beat the flour/baking soda/cream of tartar mixture into the wet ingredients until a soft dough forms.
  5. Using a small cookie scoop or a tablespoon, scoop dough and roll into balls. Roll the cookie dough balls in the sugar/lime zest mixture until completely coated.
  6. Place cookie dough balls 1-1/2 to 2 inches apart on the cookie sheet. Bake for 8-11 minutes or until a light sandy-blonde color with just a hint of gold.
  7. Cool on cookie sheet for two minutes before removing to a wire rack to cool completely. Repeat the process with the remaining cookie dough.
