Easy Strawberry Poke Cake Recipe With Jello

Helpful Hint: The cake has to chill for 3 hours. It’s best to make this poke cake the day before. Or, make it first thing in the morning if you plan on serving the cake that night. 

What is a poke cake?

If you’ve never made a poke cake, you’re in for a treat! After baking a cake in a 13×9 baking pan, holes are poked all over the cake. 

The strawberry gelatin mixture is then poured over the cake. This allows the strawberry flavor to penetrate every bite and ensures a moist, delicious cake.

  • Vanilla Pudding Mix
  • Greek Yogurt
  • Water 
  • Eggs
  • Vegetable Oil 
  • Strawberry Jell-O
  • Boiling Water

    Homemade Whipped Cream Frosting

  • Heavy whipping Cream 
  • Granulated Sugar
  • Fresh Strawberries, sliced into halves, to garnish

Steps For Making Strawberry Poke Cake

Mix the cake mix, pudding, Greek yogurt, water, eggs, and oil. Pour into a prepared 9×13 baking pan.

Bake according to the directions on the box. Allow to cool on a cooling rack for 20 minutes.

 In a small bowl, combine the Jell-O and boiling water. Pour the Jell-O mixture over the top of the cake. Cover and chill in the fridge.

Pour sugar and well-chilled cream into a large chilled mixing bowl. Beat on medium-high speed until thick and spreadable.  Spoon onto the cake and spread evenly with a spatula.

Slice the cake into 12 squares. Cut strawberries in half and place one in the middle of each square.

Ingredients

Cake

  • • 1 box white cake mix
  • • 3.4 oz box instant vanilla pudding mix
  • • 1/2 cup Greek yogurt
  • • 1 cup water (or amount on box directions)
  • • 3 large eggs (or amount on box directions)
  • • 1/2 cup vegetable oil (or amount on box directions)

Jell-O Layer

  • • 3 oz box strawberry Jell-O
  • • 1 cup boiling water

Whipped Cream Frosting

  • • 2 cups heavy whipping cream (place in mixing bowl in freezer for 30 minutes to chill)
  • • 4 tablespoons granulated sugar
  • • 6 strawberries, sliced into halves, to garnish

Instructions

  1. For the cake: Preheat the oven to 350º F. Spray a 9x13-inch baking pan with cooking spray. If you plan to remove the cake from the pan, line it with parchment paper.
  2. Add the cake mix, vanilla pudding mix, Greek yogurt, water, eggs, and oil to a large mixing bowl. Beat according to the cake box directions. Allow to cool on a rack for 20 minutes.
  3. Using the round handle of a wooden spoon, poke holes in the cake 1 inch apart. Poke 2/3 of the way down. Don't go all the way through to the bottom.
  4. At this point, place a mixing bowl with the heavy cream into the freezer to chill before going to step 4.
  5. Jello layer: Combine the strawberry jello and boiling water in a small bowl. Stir until the jello is dissolved. Pour the jello mixture over the cake, making sure the mixture gets into the holes. Chill for 3 hours.
  6. To make the whipped cream: Remove the chilled mixing bowl from the freezer and add sugar to the chilled cream in the bowl. Beat on medium-high speed for approximately two minutes, until thick and spreadable. (Do not overbeat or it will turn into butter.) Spoon the whipped cream onto the cake and spread evenly.
  7. Slice the strawberries and place them evenly onto the cake. Chill to set. When set, slice into 12 squares. Store leftovers in the refrigerator.
