Peanut Butter Brownie Cupcakes

Peanut Butter Brownie Cupcakes include my family’s two favorite flavors. Chocolate brownies are baked in a muffin tin and topped with peanut butter cups. It doesn’t get any easier. 

I’ve been making peanut butter brownie cupcakes for years. Well, they aren’t exactly cakes because they are brownies. 

Everyone loves to have their own individual desserts. That’s one reason I enjoy making cupcakes. You don’t have to slice anything. Just pass the cupcakes, please. Or brownies, in this instance.

My husband and son #2 love brownies. Anytime I ask them what they want for dessert, it’s always brownies. 

I enjoy the addition of Reese’s peanut butter cups in these brownies. They get soft but still hold their shape. When you bite into the combination of flavors, it’s a party in your mouth.

I enjoy a brownie cupcake with a glass of cold milk. My husband, the coffee connoisseur, likes his brownie with a cup of Joe. I don’t know if it’s a dark roast, breakfast blend, or medium roast and I don’t really care. I just know these brownies disappear fast at my house. 

Peanut Butter Brownie Cupcakes

You only need two ingredients to make these cupcakes – a brownie mix and mini Reese’s cups. Of course, you’ll also need the ingredients on the back of the brownie mix box. 

Preheat the oven to 350º F. and place 18 cupcake liners in muffin pans. 

Follow the directions on the brownie box to mix up the batter. Fill the cupcake liners 2/3 full of brownie batter.

Unwrap the peanut butter cups and place one in the center of each brownie, pressing down gently until the batter is even with the top of the peanut butter cup.

Bake for 20-25 minutes. Let cool before serving. 

These brownie cupcakes don’t need frosting. The peanut butter cups are all they need.

Brownie Peanut Butter Cupcakes

Delicious Brownies are baked in muffin tins and topped with a peanut butter cup.

Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 1 (18.3 oz.) package fudge brownie mix (plus ingredients called for on the back of the brownie mix)
  • 18 miniature Reese's peanut butter cups, unwrapped

Instructions

    1. Preheat oven to 350ºF. Place paper baking cups in muffin pans.
    2. Combine brownie mix according to instructions on the package. Fill baking cups 2/3 full.  
    3. Remove wrappers from peanut butter cups. Place one peanut butter cup in the center of each brownie and press down until the batter meets the top edge of the candy.
    4. Bake at 350ºF for 20-25 minutes.

Notes

For this recipe, I used Duncan Hines Chewy Fudge brownie mix and made them according to the cake-like brownies on the back of the box.
