When my son was in his freshman and sophomore years of college, he seemed to bring home a new girlfriend to meet “the parents” every three months. Thankfully, he’s grown up (kinda) and is past that infatuation phase.
Fast forward a few years and he’s now engaged to be married in November. What does that have to do with Cheesy Egg Roll and Tater Tot Breakfast Bake? Just keep on reading.
Hosting Weekend Guests
During those college years, I learned how to host weekend guests like a pro. I finally perfected the get-the-guest-room-ready-in-mere-minutes with a welcome basket and clean sheets on the bed.
To keep from spending the entire weekend in the kitchen, I created Cheesy Egg Roll and Tater Tot Breakfast Bake.
Egg Rolls for breakfast? Sure! Why not?
Van’s Kitchen Egg Rolls are a favorite snack at my house. It’s also a great way to sneak in extra veggies.
They’re full of freshly chopped carrots, onions, celery, and cabbage and the kids (even college kids) don’t have to know about the extra veggie boost.

Stop By The Deli Section at Walmart
Van’s Kitchen Egg Rolls are located right next to the deli section at my local Walmart.
I choose Van’s Kitchen Egg Rolls for several reasons. Besides tasting great, the egg rolls have no added MSG.
Van’s Kitchen is run by a CEO who also happens to be the mother of two teenage boys. The CEO’s parents started the company when they emigrated to the United States from Vietnam. They are committed to making honest food the honest way.
