When my son was in his freshman and sophomore years of college, he seemed to bring home a new girlfriend to meet “the parents” every three months. Thankfully, he’s grown up (kinda) and is past that infatuation phase.

Hosting Weekend Guests
During those college years, I learned how to host weekend guests like a pro. I finally perfected the get-the-guest-room-ready-in-mere-minutes with a welcome basket and clean sheets on the bed. To free myself from spending the entire weekend in the kitchen, I created Cheesy Egg Roll and Tater Tot Breakfast Bake.
Egg Rolls for breakfast? Sure! Why not? Van’s Kitchen Egg Rolls are a favorite snack at my house. It’s also a great way to sneak in extra veggies. They’re full of freshly chopped carrots, onions, celery and cabbage and the kids (even college kids) don’t have to know about the extra veggie boost.
Cheesy Egg Roll and Tater Tot Breakfast Bake
Brown a pound of ground sausage and drain. Mix the sausage with the tater tots and one cup shredded cheese.
Place in a greased casserole dish or baking pan. Combine the eggs, milk, and seasonings together and pour over sausage mixture.
Bake at 350º for 30 minutes.
Time to Slice the Egg Rolls!
Meanwhile, slice Van’s Kitchen Egg Rolls.
Top the breakfast bake with the egg roll slices and the remaining cup of cheese.
Bake for 20 more minutes.
