Banana Coffee Cake with Vanilla Sauce is an easy cake to make and it reminds me of the tropics. It has all my favorite flavors – bananas, rum extract, and vanilla.
Sometimes I use coconut extract instead of rum. If you’re a coconut lover like me, you should try it.
Speaking of Tropics
Speaking of tropics, my husband and I just returned from one of our favorite Caribbean islands. Our anniversary is in October but we celebrate in July. Why? October is one of the busiest months of the year for us.
My family reunion takes place on the second Saturday in October. Mom always hosted it at the cabin in the country (the main house is in town). Now that mom has graduated to heaven, her sister, Jean, graciously holds the reunion in the life center at their church.
Also, my husband will be traveling to Haiti during October and we have several birthdays as well. So, that’s why we always celebrate our anniversary in July. We are usually in different cities or even countries on the day of. But it’s all good!
Coffee Cakes Are Popular At My House
My family enjoys a good coffee cake. Whether it’s for breakfast, brunch, snack or dessert, this cake delivers in taste and ease in preparation. There are several steps but it’s still easy.

I think it’s the crunch of the topping that I always fall in love with when it comes to coffee cakes. Grab a cup of coffee or a glass of cold milk and enjoy.
My son stopped by after I made this cake and I asked him if he’d like a slice. After one bite, he grabbed a container and took home 1/3 of the cake and sauce.
Banana Coffee Cake
Banana Coffee Cake is baked in a 13×9 baking dish. I love the casualness of a sheet cake like this. You don’t have to stack and frost layers or be concerned about the cake sticking.
Cook bananas, 1/2 cup brown sugar and 1/4 cup butter in a skillet until mixture is bubbly. Cool slightly and add one teaspoon of rum OR coconut extract.
Beat cream cheese and butter with an electric mixer at medium speed until creamy. Add brown sugar and beat until fluffy. Beat in the eggs, one at a time.
Stir together 3 cups flour, salt, baking powder, and soda. Add this to the creamed mixture, beating at low speed until combined. Stir in banana mixture. Spoon into a greased and floured 13′ x 9′ pan.
Topping
Combine pecans, cinnamon, brown sugar, and 1/4 cup flour. Add melted butter and stir into the pecan mixture. Sprinkle over batter.
Bake at 350º F. for 45 minutes or until a wooden pick inserted near the center comes out clean. Cool in the pan on a wire rack for 10 minutes.
Vanilla Sauce
In a saucepan over medium heat, combine granulated sugar and 3 Tablespoons flour. Add cream and 1/2 cup butter. Bring to a boil. Boil, stirring constantly, for two minutes or until slightly thickened.
Remove from the heat and stir in one teaspoon of vanilla extract.
To serve, cut the coffee cake into squares and serve with the vanilla sauce.

Ingredients
- 1-1/2 cups mashed ripe bananas
- 2 cups brown sugar, divided
- 1-1/2 cups butter, softened
- 1 teaspoon rum extract
- 1 teaspoon vanilla extract
- 8 oz. cream cheese, softened
- 2 eggs
- 3 1/4 cups plus 3 Tablespoons all-purpose flour, divided
- 1/8 tsp. salt
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1-1/2 cups chopped pecans
- 1 tsp. ground cinnamon
- 1 cup granulated sugar
- 2 cups heavy cream
Instructions
- Preheat oven to 350º F.
