Honey Glazed Roasted Salmon and Vegetables

Honey Glazed Roasted Salmon and Vegetables is a delicious one-pan meal. 

Cleaning the kitchen is not my favorite pastime. I can think of so many activities I’d rather be doing. That’s why I love one-pan dinners like Honey Glazed Roasted Salmon and Vegetables. This meal makes a frequent appearance at my dinner table.

Honey Glazed Roasted Salmon and Veggies

Salmon is my favorite fish and is often referred to as one of the world’s healthiest foods. It’s an excellent source of vitamins, minerals, protein, and Omega 3 fatty acids. I like it because it’s delicious.

My Honey Glazed Roasted Salmon and Vegetables takes only 30 minutes to make from start to finish. This one-pan dinner is great for weeknight meals, weekends, and when entertaining guests.

Ingredients For Honey Glazed Roasted Salmon and Vegetables

  • salmon fillets (6-8 oz. each)
  • red potatoes, scrubbed and quartered
  • asparagus, woody ends removed
  • Olive Oil (to drizzle on vegetables)
  • Salt and pepper to taste

The glaze for the salmon is simple to make. You’ll need:

  • Juice from one lemon
  • olive oil
  • honey

Prepping veggies for one-pan dinner

Preheat the Oven

Preheat the oven to 400º and quarter the red potatoes. (In the south we call them new potatoes – don’t ask me why. I have no idea.) Drizzle them with olive oil and sprinkle them with salt and pepper. As you can see, I go heavy on the pepper.

Bake the Potatoes for 10 Minutes

Place the potatoes in the oven for 10 minutes. Meanwhile, mix honey, lemon juice, and olive oil together in a small bowl.

Brush the Salmon With the Honey Glaze

Brush the salmon with the honey glaze. Don’t be shy. Use it all and add salt and pepper to taste.

Honey Glazed Roasted Salmon and Vegetables

Add the salmon to the pan of potatoes and cook for eight minutes. Add the asparagus (woody ends removed, drizzled with olive oil, and sprinkled with salt and pepper) and cook for 10 minutes. The asparagus will be crisp-tender.

Helpful Hint: If you like your asparagus overcooked (insert eye roll for a certain member of my family), add it to the pan when you add the salmon.

Honey Glazed Roasted Salmon is cooked along side of asparagus spears and red potato wedges. It's the perfect one-pan meal.

Prep Time 10 minutes
Cook Time 28 minutes
Total Time 38 minutes

Ingredients

  • 4 salmon fillets (6-8 oz. each)
  • 8 small red potatoes, scrubbed and quartered
  • 1 lb. asparagus, woody ends removed
  • Olive Oil (to drizzle on vegetables)
  • Salt and pepper to taste

Honey Glaze

  • Juice from one lemon
  • 1 tablespoon olive oil
  • 3 tablespoons honey

Instructions

  1. Preheat oven to 400º.
  2. Cut potatoes into quarters, drizzle with olive oil, sprinkle with salt and pepper. Place in roasting pan and roast for 10 minutes.
  3. Whisk together the glaze ingredients and brush salmon fillets with glaze. Salt and pepper to taste.
  4. Add the salmon to the pan of potatoes and roast for 8 minutes.
  5. Drizzle asparagus with olive oil, salt, and pepper. Add to the pan and roast for 10 minutes.

One Pan Meals Are so Easy To Make

Did I mention that this is one of my very favorite meals? The salmon is cooked and seasoned perfectly. The potatoes and asparagus are tender with a nice crunch. And I only have one pan to wash instead of three. Yippee! I do hope you try my Honey Glazed Roasted Salmon and Vegetables.

I love finding easy clean recipes like this one. I could take a bite of this delicious looking meal. Salmon tends to be more a “treat” buy around here because of the price sometimes.
As far as the clean up goes, it is not really my favorite. I tend to use foil for lining or wax paper…but there is always the time (like now) when I run out and of course, have to wash those messy pans (not my fav). I would love to try both types of dish washing liquid – I would love the sell, too!

That Honey Glazed Roasted Salmon and Vegetables looks so yummy! Admittedly I’m not the biggest fish fan (which is weird because sushi is one of my favorite foods) but I’ve been looking for more recipes that contain fish so I add start to add more of it to my diet.

Every time I see Palmolive I think of Madge from the commercials when I was a kid. I love the smell of citrus, so I would get that one. The salmon looks delicious.

Yum! We just had salmon yesterday and I’m always looking for new ways to cook it. And I have to laugh about the asparagus being overcooked…there is always someone in our family that likes things different from everyone else too.
