Whenever we’re having a party, Buffalo Chicken Wings are on the menu. These wings are perfect for game day or any day. I even make these for weekend dinners – sometimes baked, sometimes fried. Make sure you check out 29 Best Game Day Recipes.

 

In this recipe, Buffalo Chicken Wings are deep-fried. If you don’t eat fried foods, no problem, I’m going to give you alternative ways to cook the wings.

For the deep-fried method, you’ll need peanut oil for frying. I always use peanut oil because it has a high smoke point and a neutral taste. You can also use canola oil. 

Flats or Drumettes?

Sometimes I use all drumettes. But you can mix it up and use flats too. Actually, my husband likes them both. He says the drumette may have the most meat but the flats have the best flavor.

Best Deep-Fryer For Wings

I like to use an electric deep-fryer with a basket when I make wings. The basket makes it easier to fry the wings in batches. I’m all about finding easier ways to do things. It has a lid so you don’t have to be concerned about hot oil splashing on you. 

Buffalo Chicken Wings

In a large bowl, toss chicken drumettes with salt, paprika, and cayenne pepper. Pour the oil into an electric deep-fryer or a dutch oven.

Heat on medium-high heat until the temperature reaches 350º F. Fry the wings in batches (about 10 wings per batch) for 10 minutes or until golden brown and crispy. Drain on paper towels.

Heat butter and hot sauce in a saucepan on medium-low heat until well combined. Toss wings in sauce or serve the sauce on the side. 

Personally, I like to serve the sauce on the side. 

Some recipes call for coating the wings with flour. I don’t coat the wings with flour. I just don’t think you need it.

Air-Fryer Buffalo Chicken Wings Are Amazing!

Wings can also be cooked in an air fryer. Toss the wings with the salt, paprika, and cayenne pepper. Drizzle with light olive oil. I just eyeball the olive oil part. 

Preheat the air-fryer to 400º F. Cook for 30 minutes, tossing once during the cooking process.

When the wings are done, coat them with the hot sauce and butter mixture OR serve the hot sauce mixture on the side. 

You’ll need to make these in batches if using the air fryer. This method has become my favorite way to cook wings. They come out crispy and delicious. 

I love this air fryer.

How To Bake Wings Instead of Frying 

I use this method often and the wings come out crispy and juicy – not as crispy as the fried kind, but you know.

Preheat the oven to 425ºF. Spray a baking sheet with cooking spray and add the seasoned chicken wings in a single layer. Bake for 25 minutes and flip. Cook for another 20 minutes.

Buffalo Chicken Wings And Blue Cheese Dip

Spicy Chicken Wings

These crispy, tender chicken wings are perfect for game day or any day.

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 36 chicken wings (drumettes and/or flats)
  • 1-1/2 Tablespoons salt
  • 2 Tablespoons paprika
  • 1 Tablespoon cayenne pepper
  • â…“ cup hot sauce
  • 2 T butter
  • 1 head celery, cut into sticks (optional)
  • (3 cups oil for deep-frying)

Blue Cheese Dip

  • ¾ cup sour cream
  • 4 oz. crumbled blue cheese
  • 1 Tablespoon red wine vinegar
  • salt
  • freshly ground black pepper

Instructions

    1. Place the drumettes in a bowl and toss with salt, paprika, and cayenne pepper.
    2. Pour the oil in a dutch oven OR an electric deep fryer with a lid. Heat oil on med/high heat until it reaches 350.
    3. Fry about 10 wings at a time in the hot oil until crispy and golden brown - about 10 - 12 minutes. Remove and drain on paper towels.
    4. Heat the hot sauce and butter over medium-low heat until well combined.
    5. Toss the cooked wings in the hot sauce mixture or serve on the side if desired.
    6. Combine the ingredients for the blue cheese dip in a bowl, breaking up the cheese with a fork until well combined. If the dip is too thick, add a little more vinegar.

Yum, I just love spicy foods. These wings look amazing. I’ll have to do another dip though. I could never get into bleu cheese which is odd, because I love cheese, but that’s the only one I can’t seem to stomach.

I tried making homemade wings one time and it was a total flop but that was many years ago. My son is wanting a deep fryer but this mama doesn’t have any more counter space to give up. Thanks to a microwave taking up space but I don’t have an alternate place to put it at the moment.

I’d love to try making homemade wings again. We love them and the frozen ones just don’t cut it.
