Best Sweet Potato Bread

Sweet Potato Bread is tender, delicious, and smells so good while baking. This bread is easy to make and always gets rave reviews. The glaze really puts it over the top!

Simple Ingredients For Sweet Potato Bread

  • cooked and mashed sweet potatoes
  • granulated sugar
  • vegetable oil
  • water
  • eggs
  • flour
  • baking soda
  • nutmeg
  • ground cinnamon
  • pinch of salt

How To Make Sweet Potato Bread (full printable recipe down below!)

This is the easiest bread to whip up. In a mixing bowl, combine the sweet potatoes, granulated sugar, oil, water, and eggs. Mix well. (I use my stand mixer turned to low)

Slowly stir in the flour, baking soda, nutmeg, cinnamon, and salt until combined. 

Pour into a 9×5 loaf pan that has been sprayed with cooking spray.

Bake at 350º F. for 45-50 minutes or until a toothpick inserted near the center of the bread comes out clean.

Let cool in the pan on a wire rack for 10 minutes before removing from the pan to continue cooling on a wire rack.

Yes, I like to drizzle the warm bread with a glaze that comes together in no time at all. 

You don’t have to add the glaze but I love it. 

How To Cook Sweet Potatoes For Sweet Potato Bread

You can boil the potatoes, bake the potatoes OR buy canned sweet potatoes. You can even use baby food sweet potatoes. 

Boil: Peel and dice two sweet potatoes into 2-inch chunks. Bring a large pot of water to a boil. Add the potatoes and boil for 15 minutes or until the potatoes are fork-tender.

Drain, letting them sit in the colander for a few minutes to make sure all the water drains. Mash with a potato masher. 

Bake: Preheat the oven to 425º F.  Wash and dry two medium sweet potatoes. Place foil on a baking sheet. Use a fork to poke holes in the sweet potatoes before placing them on the foil.

Bake for 45-50 minutes or until the inside of the potatoes is soft when poked with a fork. 

Ingredients For Sweet Potato Bread Glaze

  • 1 cup powdered sugar
  • 2 Tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 Tablespoons milk

Combine the glaze ingredients in a large bowl. If the glaze is too thick, add another tablespoon of milk. If it’s too thin, add a little more powdered sugar.  Pour over warm (not hot) sweet potato bread. 

Grab a glass of cold milk OR a cup of your favorite coffee. They both pair perfectly with Easy Sweet Potato Bread. 

How To Store Sweet Potato Bread

Store in an airtight container at room temperature for up to three days. Make sure you keep the bread wrapped tightly so it won’t dry out. You can also store it in an airtight container in the refrigerator for 3-4 days. 

This bread can be frozen (without the glaze) for up to six months. When the bread has completely cooled, wrap in plastic wrap or foil, then place in a ziplock bag. 

When ready to defrost, place the bread on the kitchen counter. Once it has defrosted, make the glaze and pour over the bread before serving.

Can You Substitute Pumpkin For Sweet Potato? 

Yes, you can substitute one cup of pumpkin for the sweet potato! Make sure you use plain, canned pumpkin (not pumpkin pie filling). 

This recipe can be easily doubled to make two loaves of bread.

Ingredients

  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 2 eggs
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Glaze

  • 1 cup powdered sugar
  • 2 Tablespoons melted butter
  • 1/2 teaspoon vanilla
  • 2 Tablespoons milk

Instructions

  1. Preheat oven to 350º F. Spray a 9x5 loaf pan with cooking spray and set aside.
  2. In a mixing bowl, combine the sweet potatoes, granulated sugar, vegetable oil, water, and eggs. Mix well.
  3. In a medium bowl, mix together the flour, baking soda, salt, nutmeg, and cinnamon. Slowly pour into the sweet potato mixture and stir just until combined.
  4. Pour batter into prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted near the center of the bread comes out clean. Cool for 10 minutes in the pan on a wire rack. Remove bread from the pan and cool on a rack.
  5. To make the glaze, combine powdered sugar, melted butter, vanilla, and milk. Stir until well combined. Pour over warm bread.
