Zippy Egg Salad Dip

There’s just something about spring that makes me want to sing! But I won’t. It’s not pretty!  Flowers are showing off their beautiful blossoms. Trees are budding and the grass is turning a vivid green.  I love spring and Zippy Egg Salad Dip.

Hello Spring and Zippy Egg Salad

It’s time to shed our winter coats, scarves, and closed-toe shoes and trade them in for lighter fabrics and sandals. I’m going completely off subject, but did you know that scarf has two plurals? Scarves are the preferred form, but scarfs are the original and were more common before the 20th century. Who knew?

We even begin to eat lighter in the spring (thank goodness!). Gone are the heavy stews and comfort foods. Bright, fresh salads, fruits, and spring vegetables make their debut. Even Easter is making an early appearance this year.

I’ve decided to ditch the normal deviled eggs (oh, my!). I’m going to serve my zippy egg salad dip as an appetizer while I’m putting the finishing touches on my Easter spread.

Zippy Egg Salad

Maybe my zippy dip will keep everyone out of the kitchen! Yes, I’m that person who wants everyone on the other side of the island when I’m cooking. Don’t step foot on my side of the kitchen! Is that weird?

Let’s Make Zippy Egg Salad

This recipe begins with boiled eggs, of course. Place eggs in a large saucepan and cover with water (enough to cover eggs by 1″). Bring to a boil on med/high heat.  

Once the water-covered eggs come to a boil, cover saucepan with a lid, remove from heat and set the timer for 18 minutes. When the timer goes off, drain eggs and place under cold running water until cool enough to peel. Perfection!

How to Tell If Eggs Are Fresh

Fill a deep bowl with cold water and place eggs in the bowl. If they sink to the bottom and lay flat on their sides, they are fresh. You will know they are safe to eat if they are a few weeks old because the eggs will stand on one end at the bottom of the bowl. If they float to the surface, they’re no longer fresh enough to eat.

Zippy Egg Salad Dip

Amazing Party Dips - Zippy Egg Salad Dip

Zippy Egg Salad is perfect as a dip or sandwich. I love the extra spiciness in this dip.

Ingredients

  • 12 hardboiled eggs, peeled and chopped
  • 2 Tablespoons mayonnaise (I always use Dukes)
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon onion powder
  • 1 teaspoon fresh dill
  • 1/2 teaspoon garlic powder
  • 1 tsp. dijon mustard
  • Black pepper and salt to taste
  • Garnish with chives, paprika & chopped bacon, if desired

Instructions

  1. Chop eggs in a bowl and set aside.
  2. Mix together mayo, yogurt, dill, onion powder, garlic powder, dijon mustard, salt, pepper and add to chopped eggs. Mix gently.
  3. Garnish with chives, paprika & chopped, crisp bacon if desired.
  4. Serve with veggie strips, crackers or baked tortilla chips.

You can also use this dip for egg salad sandwiches. The dijon mustard adds a little zip. Because I like it spicy, I sometimes add a bit more dijon.

We love egg salad at our house. I wonder why we don’t make it year round. We are tried and true Duke’s users also, not even considering another brand!
I am so ready for lighter foods!

oh that looks so delicious! my springtime favorite food has to be macaroni salad (I want to make them myself but I have no clue how!) I love boiled eggs, deviled eggs, anything egg related. I think I will try this recipe.

Why, oh why did I read this while I’m at work?! Now my mouth is watering. Lol. This looks amazing, Alli and it seems simple enough to make.

I had no idea how to tell if an egg was good to eat. My mind is blown! I’ve always wanted to take my eggs out of the ugly carton and put them in a cute glass storage case, but I haven’t because of the fear of not knowing when they expire. Now I can! – yay!!

Your zippy egg salad dip makes me want to get in the kitchen and whip some up for myself. It looks and sounds amazing. After Easter I always have waaaaaaay too many eggs left over and this would be a perfect dish to use them in. Thanks for sharing.

Yum! This looks and sounds delicious! My favorite spring time/ summer time food is pasta salad. Tuna pasta salad, it’s so good but we never eat it unless it’s spring/summer and we are bbq’ing! Your zippy egg salad dip looks really good, I bet my kids would absolutely love it too!

Your tip on telling if eggs are still fresh was a game changer for me! We have been using a ton of eggs in our cooking (great source of protein) so clearly I want to make sure they are fresh. This recipe looks like something our family would enjoy during our Easter meal!

I love egg salad so this dip sounds SO good. It’s actually perfect for Easter since deviled eggs and egg salad is so popular at Easter brunch/lunch/dinner. I’m not sure how well my kids would like it since they are so picky… BUT more for me then right?!

I did not know scarves has two plurals? And is “plurals” even a word?? Or do we say plural because it is already in plural form…lol….don’t really know what I’m saying! But the salad does look great. I like that it has less mayo and more Greek yogurt. Also, it is not weird that you want your space while cooking. Just feels so puzzling when everyone is around you:)

Mouth is watering, even after I devoured my lunch. I have had egg salad before, or potato salad which looks similar to this. But I’m pretty certain I haven’t had an egg dip. I bet it’s good, especially since you were saying it was zippy! 🙂 Yum!

That egg salad dip looks amazing. And I don’t think it is weird at all to want people out of the kitchen. I am the same way. I can’t cook with people hovering over me. I get distracted and annoyed.

Oh, I want to try this. I saw the picture and instantly thought, “Is that dill?!” That totally makes sense with egg salad but I’ve never thought of it. It’s exciting to find a new twist on a classic you already love.

Confession: I’ve never ate egg salad. I’ll eat tuna salad and chicken salad (ham salad is just too salty for me) but I never thought about egg salad. Your photos look fantastic, the recipe sounds delicious, I want to give this a shot!
