I do believe I could eat Tex-Mex every day! Good thing I’ve joined RO*TEL for 31 Days of Fiesta during the month of May. I’m making all of my family favorites and we’re celebrating the entire month.
My youngest grandson inherited my love of zesty, bold flavors and he hangs right with me when we’re eating our favorite spicy foods. He’s only five, but he’s willing to try new foods, especially if they have a kick to them. My Zesty Corn Salad fits the bill. It’s easy to make and if we have leftovers, the family has a lively discussion over who gets to take the Zesty Corn Salad home.
While my husband grills honey glazed pork chops, I make the Zesty Corn Salad. The bold, vibrant colors, the fresh veggies mixed in, and the ease in preparing the dressing makes this a dish you’ll make over and over. I promise!
Zesty Corn Salad
Place a bag of frozen corn in a colander. Run water over the corn until it’s thawed. Drain well.
Mix the corn with one can of RO*TEL. Add sliced spring (green) onions, a chopped orange bell pepper, and chopped cilantro.
In a small bowl, whisk together vegetable oil, red wine vinegar, zest and juice of one lime, minced garlic, cayenne pepper, and salt.
Pour the dressing over the corn and toss gently.
Walmart has everything I need to make my Zesty Corn Salad. Whenever I’m shopping, I always stock up on RO*TEL because it’s so versatile. It’s a delicious addition to my Black Bean Chili and Pimento Cheese Spread.
I’m having so much fun celebrating 31 Days of Fiesta, I think I’ll keep the theme going the entire summer! My Zesty Corn Salad is the perfect side dish for grilled fish or burgers and I always make it when the family visits the beach.
