Favorite Salad Is Quick, Easy and Delicious

We all have our favorite salads, right? My Everyday Favorite Salad is delicious and the salad I eat most days, especially during the spring and summer.

For me, salads are the perfect lunch. 

I tend to overindulge a bit during the holidays. Once they are over, I jump back into a regular exercise routine and a better eating plan. 

Today I’m sharing my favorite lunch salad. It’s quick and easy. This salad is also filling and portable. 

Sometimes salads can be so boring, especially when you’re trying to cut back on too many additions. However, I never, ever tire of the crunchiness, the sweetness, the tartness, the goodness of my everyday salad. Yum!

Once, I ate this salad every weekday for about two months. It never got boring because I tend to switch things around. I’ll change up the fruit, the nuts, and the salad dressing. 

My Everyday Favorite Salad

For this salad, you’ll need:

  • 2 cups organic spring mix (baby greens & radicchio)
  • 1 small red delicious apple, cored and chopped (or your favorite apple)
  • 1/4 cup toasted pecans
  • 2 Tablespoons Kraft Asian Toasted Sesame Lite Dressing
  • 1 Tablespoon cranberries (optional)

Mix Things Up With My Favorite Everyday Salad

Sometimes, just to mix things up, I use a Bosc pear instead of an apple and walnuts or almonds instead of pecans. 

Occasionally, I’ll use a homemade dressing like Mom’s Strawberry Vinegrette. I like to mix it up some so I don’t get in a rut. Since some salad dressings can have way too many calories, I pay close attention to the calorie count.

I’ve never been one to like my salad swimming in dressing. When I’m eating out, I always ask for the dressing on the side so I can lightly dress the salad to suit my taste. Plus, I save lots of calories. 

Stuff My Favorite Everyday Salad into a Pita!

This salad can also be stuffed into a pita for a portable lunch. It makes a yummy on-the-go meal.

Salad greens are so good for us. Plus, they are usually very low in calories. Here are a few of my favorite greens:

  • Spinach leaves
  • Butter lettuce
  • Romaine
  • Shredded Iceberg
  • Radicchio

More Delicious Salad Add-Ins:

  • Nuts  – I love nuts so I always make sure I measure a serving size because the calories can add up quickly. One serving of nuts is approximately 1/4 cup or one oz. 
  • Seeds
  • Berries – Try pomegranate seeds to jazz up your salad! 
  • Beans (Chickpeas are a favorite)
  • Fresh fruit
  • Olives
  • Fresh Vegetables
  • Grilled chicken or salmon
  • Onions – my favorite onion is Vidalia.

Best Salad Dressings

No matter how high we pile our plates with good-for-us greens, the wrong dressing can undo all of our good intentions.

It’s easy to whip up a salad dressing at home using vinegar, herbs, and healthy oil. You can also find a store-bought salad dressing that works.

When it comes to store-bought dressing, Asian Toasted Sesame is a favorite. I also like:

  • Light Italian
  • Balsamic Vinaigrette 
  • Lite Chunky Blue Cheese

My Everyday Salad

This is my go-to salad during the spring and summer. I love the crunch of the pecans and apples.

Ingredients

  • 2 cups organic spring mix (baby greens & radicchio)
  • 1 small red delicious apple, cored and chopped
  • 1/4 cup toasted pecans
  • 2 Tablespoons Kraft Asian Toasted Sesame Lite Dressing
  • 1 Tablespoon cranberries (optional)

Instructions

  1. Place the spring mix baby greens in a bowl or plate. Top with apples, pecans and cranberries. Drizzle the dressing over the top.
