Continue heating over medium-low heat, stirring frequently for about 3-5 minutes. Continue cooking until the butter is golden brown and fragrant, about 2 more minutes.

Allow the butter to cool to room temperature, stirring occasionally. 

Cream the liquid browned butter, granulated sugar, and dark brown sugar in a large mixing bowl using a hand or stand mixer. The mixture may be grainy.

Add in the egg and vanilla extract and beat to combine. Beat until the mixture is light and fluffy.

In a small mixing bowl, whisk together the flour, cornstarch, cream of tartar, and baking soda.

Mix the dry ingredients with the wet ingredients, beating on low until a soft dough forms.

  • ¼ teaspoon salt
  • ½ cup granulated white sugar
  • ½ cup dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 ½ teaspoon vanilla extract
  • 1 ⅔ cups all-purpose flour, spooned and leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda

Instructions

  2. Once fully melted, continue heating the butter over medium-low heat, stirring frequently until it stops bubbling and gets foamy, about 3-5 minutes. 
  3. Stir well and continue cooking until the butter is golden brown and fragrant, about 2 more minutes. Do not overcook.
  4. Allow the butter to cool to room temperature, stirring occasionally. It can still be liquid but needs to be cooled enough to touch.
  5. When ready to make the cookies, preheat the oven to 350 degrees Fahrenheit and line two large cookie sheets with parchment paper. 
  6. Cream together the liquid browned butter, granulated sugar, and dark brown sugar in a large mixing bowl using a hand or stand mixer. The mixture may be grainy.
  7. Add in the egg and vanilla extract and beat to combine. Beat for about 2 minutes, until the mixture is light, soft, and fluffy. 
  8. In a small mixing bowl, whisk together the flour, cornstarch, cream of tartar, and baking soda.
  9. Gradually mix the dry ingredients into the wet ingredients, beating on low just until a soft dough forms. 
  10. Using a 1 ½ Tablespoon cookie scoop, scoop out dough and roll into balls. Place the cookies on the prepared cookie sheets. 
  11. Bake for 10-12 minutes, until the edges begin to get golden brown and the top is an even color across. Do not overcook.
